Baked Zucchini, Tomato and Goat Cheese

    Here’s what you’ll need:

  • Zucchini
  • Tomato
  • Goat cheese
    How to make:

  • Slice zucchini into rounds.
  • Slice the tomato and cut into quarters. Place on top of the zucchini.
  • Top it with goat cheese.
  • Place in broiler for 8-10 minutes until the cheese begins to melt.
  • This is a great snack.

    That looked like a green (unripe) tomato.  So use any tomato?

    It was an heirloom. You can use any tomato.

    We had something similar the other night. It turned out like a grilled caprese salad with heirloom tomatoes and squash.
