Mashed Cauliflower

    Here’s what you’ll need:

  • 1 head of cauliflower
  • Tablespoon olive oil
  • Dash of sea salt and pepper
  • Any of the following are optional to season as you wish: fresh or dried herbs, garlic, milk, cream or nut milk.
    How to make:

  • Boil up cauliflower in water until tender.
  • Drain cauliflower.
  • You can mash in a bowl or add to food processor (recommended).
  • Add olive oil, sea salt and pepper.
  • Blend down until smooth.
  • To mine I added splash of nut milk, dried herbs and clove of garlic and blended again.
  • Serve as you would mashed potatoes.

    I never really think of mashing anything but starches, but that looks great.  Once the cauliflower starts coming out at the farmers market I will definitely try this.

    If you add cauliflower mash to stir-fried ginger/garlic/pepper/masala it makes a delicious curry.

    Definitely love this better than traditional mashed potatoes. Simple to make, and really delicious and creamy.

    I like it so much. Have you tried it with garlic and anchovy spread and put it over pasta ?

    Have you made it with the orange cauliflower? Comes out creamier.

    YUM! One of my favorites. Also makes a great faux potato soup with a little more liquid, and tastes especially good oven roasted and then mashed.

    I’m a big cauliflower fan. Do you think my kids will these are mashed potatoes? I could try to trick them into eating cauliflower-they’re not fans. I guess if they don’t like it, more for me!

    Looks good, you can buy small bottles of white appliance touch up paint for that stove top. I’m assuming all the black marks are chips and not dirt.

    Thank you for reminding me. I used to eat it in place of potatoes all the time cause the potatoes & other night shades make my body ache.

    Made this with the yellow/orange cauliflower today for lunch.  It was so good!  It really did turn out creamy and tasted just like mashed potatoes.  I’m going to use the leftovers to make “potato” soup.  Thanks for the recipe, Mike.

    People need to try this! I’ve made it before from a different source. I recommend forcing the cauliflower through a fine mesh sieve after putting it through the food processor. People with sensitivities to potatoes or have carb restrictions should especially take note of this recipe! My diabetic brother in law loves this stuff.
